The traditional cast iron handles offer balance and heat resistance, and are securely fastened with three - 3mm copper rivets for the best reduction of heat transfer to the handle from the pan. These pans can also be used for searing because of the tin lined surface, which is virtually a non-stick lining. The tin lining allows even the walls of the pan to be used, as the complete inner surface of the pan is one temperature through out. This is why all sauces taste better in copper sauce pans with tin lining. There are NO food burn rings to taint the taste of the sauces.
